Cheesy Avocado and Salsa Fresca Stuffed Chicken Breasts

This stuffed chicken breast raises the bar for weekday dinner or entertaining friends. Prepared with fresh ingredients, herbs and spices, and topped with melted Cracker Barrel Signature Extra Old & Mozza Shredded Cheese. Go beyond delicious!

Ingredients

  • 1 cup (250 mL) Cracker Barrel Signature Extra Old & Mozza Shredded Cheese
  • 4 boneless skinless chicken breasts, butterflied, fat trimmed
  • 4 tsp (20 mL) olive oil
  • 2 tsp (10 mL) garlic powder
  • 2 tsp (10 mL) chili powder
  • 2 tsp (10 mL) fresh herbs of choice, chopped (or oregano)
  • fresh ground sea salt and black pepper to taste
  • 2 avocados, peeled and sliced into ¼” slices

Salsa Fresca:

  • 4 medium tomatoes, diced
  • ¼ cup (60 mL) red onion, minced
  • ¼ cup (60 mL) red onion, finely diced
  • ¼ cup (60 mL) cilantro, finely chopped
  • 3 tsp (15 mL) minced garlic
  • 1 small jalapeno pepper, finely diced, seeds removed
  • 1 chili pepper, finely diced, seeds removed
  • juice of 1 lime
  • fresh ground sea salt and black pepper to taste

Directions

  1. Prepare and assemble all the ingredients for the Salsa Fresca and set aside.
  2. Open butterflied chicken breasts, and drizzle with olive oil, and season with garlic powder, chili powder, fresh herbs, salt and pepper. Arrange ¼ of the avocado slices covering one entire side of each opened breast. Top avocado with 2-3 tablespoons of Salsa Fresca. Reserve remaining Salsa Fresca to use as a topping for the chicken once baked.
  3. Fold each chicken breast to cover the avocado and Salsa Fresca stuffing. Secure each breast with 3 toothpicks along the open side of the breast. Place into a baking dish and drizzle top of the chicken breasts with olive oil and season with garlic powder, chili powder, fresh herbs, sea salt and pepper to taste.
  4. Place into a 400°F (200°C) pre-heated oven for 30 minutes. Remove from oven and sprinkle tops of chicken breasts with Cracker Barrel Signature Extra Old & Mozza Shredded Cheese. Return to oven for 2-4 minutes until cheese has melted and reached the desired amount of browning. Remove from oven and allow to rest for 5 minutes before removing toothpicks and serving.
