Bacon, Tomato and Avocado on Toast

Ingredients

  • 1 cup (250 mL) Cracker Barrel Feta Shredded Cheese
  • 1 ripe avocado, halved, pitted, peeled and mashed
  • 4 slices multigrain bread, toasted
  • 8 slices bacon, cooked
  • 8 slices tomato
  • 1/2 tsp (2 mL) cracked pepper
  • 1/4 tsp (1 mL) salt and paprika
  • 4 tsp (20 mL) olive oil
  • 2 tbsp (30 mL) finely chopped fresh chives

Directions

  1. Spread avocado over toast; top with bacon and tomato. Sprinkle with pepper, salt and paprika. Drizzle with olive oil.
  2. Sprinkle with cheese; garnish with chives.

Helpful Hint

Add baby arugula or baby spinach to the open-face sandwich if desired.
